Courgetti – a food fad worth trying

 

Yes, you heard me right: Courgetti .

Its thin strips of courgette masquerading as spaghetti, which suits a fodmapper very well!  While gluten free spaghetti is now on every supermarket shelf, the long list of weird and wacky ingredients and general processed-ness puts me off. So instead I have joined the latest food trend of replacing carbs with vegetables, starting with my old favourite the courgette…

Abby’s almond & raspberry cake

Now I’m not really a cake person, but when my inspiring ex-manager Abby made this for me as a goodbye gift I went back for a second slice of cake….and then a third!  I knew this was special so I asked her for the recipe. She explained it was an old favourite that required minimal flour so she’d replaced the wheat flour with gluten free. Clever lady. Abby later told me (as I gobbled the third slice) that her three year old daughter loves making this cake because she has the important job of gently pushing the raspberries into the mixture before baking!

Quick & scrumptious low fodmap Banana Pancakes

Low fodmap banana pancake stackThe weekend before last I spent up in beautiful Edinburgh celebrating a friend’s birthday. My favourite moments were during the long lazy mornings spent hugging (many) mugs of tea followed by almighty breakfasts of eggs and bacon- twelve of us round the table all tucking in. For the two gluten free-ers among us I made banana pancakes.
